Swiss Steak

Yield: 4 servings 
Time: 15 min prep + 1.5 hrs cooking

Ingredients


1-2 lbs top round steak
2 green bell peppers
2 onions
3 cloves garlic, minced
28 oz can whole peeled tomatoes
1 box cous cous
Salt
Pepper



Directions 

Sear steak in dutch oven on both sides. Remove from pot. 

Sweat onions and garlic in olive oil in dutch oven, add peppers for the last few minutes. Add salt and pepper and tomatoes to the pot. Break up tomatoes with a knife or kitchen shears. Return steak to pot and nestle in sauce. 

Cover and simmer for 1.5 hours. Prop lid half open during last 15 minutes or so of cooking to let sauce reduce. 

Remove steak from pot and slice thinly against the grain before serving with sauce and veggies over hot cous cous.
