Honey Lime Fish


Servings: 4
Time: 1 hour marinate + 15 minutes cooking

Ingredients
1 lbs white fish (about four 4oz filets)

Batter
1/2 cup flour
1/4 tsp kosher salt 
1/4 tsp ground pepper

Marinade
11/2 Tbsp honey
1 Tbsp lime juice
Zest of one lime
1 Tbsp c olive oil
1/4 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper


Directions 

Prepare marinade by mixing together honey, lime juice, lime zest, olive oil, salt, pepper, and garlic powder.  Marinade fish in refrigerator for at least 1 hour.

Heat a pan coated with olive oil. Prepare batter mixture by stirring together the flour, salt, and pepper. Remove fish from marinade and coat with batter and place in hot pan. Fry for at least 4 minutes per side or until fish flakes easily. Can also be baked after battering in oven instead of frying.

Whole Wheat Waffles


Servings: 5-6
Time: 30 minutes

Ingredients
2 eggs
1 c whole wheat flour
1 c all purpose flour
1 3/4 c milk
1/4 c coconut oil
1 Tbsp brown sugar
1 1/2 tsp baking soda
1/4 tsp kosher salt
1 tsp vanilla extract


Directions 

Preheat waffle iron.

Whisk eggs until light and fluffy. 

Add in remaining ingredients to batter and stir thoroughly. 

Pour into pre-heated waffle iron in batches.

Serve with fresh whipped cream, cinnamon, maple syrup, and berries. 

Batter will keep in refrigerator for up to 2 days.
