Coconut Oatmeal White Chocolate Cookies


Servings: 4 dozen
Time: 1 hour

Ingredients
2 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup granulated sugar
1 cup packed light brown sugar
2 large eggs, room temperature
1 cup coconut oil, melted and slightly cooled
1 tsp vanilla extract
1 cup quick oats
4 oz white chocolate chips


Directions

Preheat oven to 350 degrees and line two cookie sheets with parchment paper. 

Whisk the flour, baking soda, baking powder, and salt together in a medium bowl. 

Combine the sugars and eggs together in a large bowl and whisk until light and fluffy. Add in the coconut oil and vanilla extract and whisk to combine. 

Mix in the dry ingredients to the wet ingredients a little at a time. Add in the oats and white chocolate chips and stir to combine. 

Bake for about 9 minutes per batch.
