Ingredients
1 1/2 pounds of sirloin tip steak, flank steak, or other tender beef sliced thin against the grain
1/2 cup low sodium soy sauce
3 Tbsp rice wine vinegar
2 Tbsp brown sugar
2 Tbsp corn starch
1 Tbsp minced fresh ginger
8 oz snow peas, ends trimmed off
5 scallions, chopped
Pinch of salt
3 Tbsp sesame oil
Crushed red pepper for sprinkling
Rice, cooked
Directions
Mix together soy sauce, vinegar, brown sugar, corn starch, and ginger. Pour half the mixture over the beef in a bowl and reserve the other half. Cover with plastic wrap and let marinade for 15 minutes.
Heat a skillet until very hot and add sesame oil. Add snow peas and stir fry for about 2 minutes, until there is just a tinge of brown on them (or less time if you prefer). Remove to a plate.
Re-heat skillet until very hot (again!). Add a touch more sesame oil and cook half the beef along with half the scallions, then remove and cook the second half of the beef and remaining scallions. Add cooked beef and scallions on plate back to the skillet and add the snow peans and reserved marinade. Toss together and add salt if needed. Serve immediately over cooked rice and top with red pepper, if desired.
