Grilled Cilantro Pesto Chicken


Servings: 8
Time: 1 hr + 30 minutes

Ingredients

2 lbs chicken breasts
2/3 cup olive oil
2 Tbsp lemon juice
2 jalapeno peppers, chopped
3 cups of cilantro leaves
1/2 cup mint leaves
4 garlic cloves, minced
1 tsp salt
1 tsp ground ginger

Naan bread (optional)


Directions 

Mix marinade ingredients together and toss with chicken breasts (reserve about 1 cup for naan pizzas if desired). Cover and marinate for at least one hour (can hold for several hours). 

Preheat a grill to 500 degrees.

When grill is ready, add chicken breasts and cook for about 6-8 minutes per side. 

Remove chicken from grill and let rest on a plate tented with foil for about 5 minutes before serving. 

Serve with Naan pizzas - topped with fresh mozzarella, salsa, and leftover pesto (optional).

Chipotle Grilled Chicken with Avocado

Servings: 8
Time: 1 hr + 30 minutes

Ingredients

2 lbs chicken breasts
3 Tbsp olive oil
1 Tbsp lime juice
Zest of two limes
1/4 tsp salt
1/8 tsp cayenne pepper
1/4 tsp paprika
1/4 tsp chili powder

Avocado (optional)
Chipotle mayonaise (optional)
Pepper jack cheese (optional)


Directions 

Mix marinade ingredients together and toss with chicken breasts. Cover and marinate for at least one hour (can hold for several hours). 

Preheat a grill to 500 degrees.

When grill is ready, add chicken breasts and cook for about 6-8 minutes per side. 

Remove chicken from grill and let rest on a plate tented with foil for about 5 minutes before serving. 

Serve on toasted buns with sliced avocado, pepper jack cheese, and chipotle mayonaise on top.
