Ingredients
2 lbs chicken breasts
2/3 cup olive oil
2 Tbsp lemon juice
2 jalapeno peppers, chopped
3 cups of cilantro leaves
1/2 cup mint leaves
4 garlic cloves, minced
1 tsp salt
1 tsp ground ginger
Naan bread (optional)
Directions
Mix marinade ingredients together and toss with chicken breasts (reserve about 1 cup for naan pizzas if desired). Cover and marinate for at least one hour (can hold for several hours).
Preheat a grill to 500 degrees.
When grill is ready, add chicken breasts and cook for about 6-8 minutes per side.
Remove chicken from grill and let rest on a plate tented with foil for about 5 minutes before serving.
Serve with Naan pizzas - topped with fresh mozzarella, salsa, and leftover pesto (optional).
