Lemon Poppyseed Whole Wheat Pancakes


Servings: 2-3
Time: 30 minutes, including cooking time

Ingredients
1 cup + 2 Tbsp whole wheat flour
1 1/2 tsp baking powder
1 Tbsp demerara sugar
1 Tbsp poppy seeds
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/2 tsp lemon zest (about half of one lemon)
Pinch of kosher salt
1 Tbsp coconut oil
1 cup + 2 Tbsp water


Directions

Heat a greased cast iron skillet. Place all ingredients in a large bowl and stir until smooth. Scoop the batter into the heated skillet using a large cookie scoop. Cook the batter until bubbles form on the top and flip to cook the other side. Remove to a plate and cover with a paper towel to keep warm. Repeat until all batter has been cooked. Enjoy!
